Think of Chipotle for burritos, PizzaFire for pizza and Subway for sandwiches. You go down the line choosing ingredients to be added, in this case, to your bowl or sushi roll. They have a nutritional menu that labels which of each of their ingredients are vegan.
We tried two rolls, one with roasted tofu (marinated overnight) as the base and the other with roasted portobello mushroom as the base. In addition, we tried a bowl, in this case the Wholey Bowl, which had brown rice, citrus kale, roasted tofu, cucumber, carrot, sweet onion, sweet pepper, avocado, raw beets, miso-ponzu dressing, green onion and sesame seeds. You could make your own bowl by picking ingredients to your choosing.
We also had a bowl of miso soup. All in all, two rolls, a bowl, and a cup of soup was too much to eat, though we managed to finish it all.
Overall, we were impressed with the freshness of the food and think that Fusian provides some great clearly-marked options for vegans. This is a regional chain that we’re happy has entered the Toledo market! Bravo to this fast food place with many healthy options and a charming atmosphere!
